Wash the potatoes well and boil them with the skin on. When they have boiled, sprinkle them with olive oil, garlic and mash them very well.
Wash and dice a small-sized onion. Add the sliced onion into a pan at medium heat and cook for 2-3 minutes until it becomes brown at color. Once the onions are caramelized, use a bit of brown sugar and balsamic vinegar to enhance the taste.
Add the caramelized onion over the mashed potatoes. Put as much onion on top of the mashed potatoes as you like, at your taste.
Serve with a pickle salad on the side.
