Method

  • Start with the eggs. By hand, using the egg's shell, separate it's yolk from the whites. Mix the egg whites with a whisk until you get a stiff foam.

  • Peel and wash the potatoes, cut them into cubes and boil for 20 minutes in salted water. When ready, mash the potatoes using a fork in a clean bowl, then add the egg yolks, melted butter and milk. Mix until you get a homogeneous mixture.

  • Take the cheese (it is recommended to use Dutch or Cheddar cheese) and grate it in a small bowl. Add the grated cheese over the egg mixture and mix very well with a spatula.

  • Integrate the egg whites foam into the mashed potatoes. Mix gently with a spoon until incorporated.

  • In small ceramic dish greased with butter, add the final mixture and sprinkle a bit of paprika on top. Place it in the oven preheated to 356° F for 35-40 minutes to cook.

Recommendation

  • Serve it hot with a glass of white wine for a perfect dinner, add sour cream on top if you are a fan of it.

  • You can also mix chopped parsley inside the mashed potatoes before taking them in the oven.

Bon Appetit!
