  • Place 1 cup of rice and 2 cups of water in a medium saucepan. Bring the rice to a simmer; it usually takes around 15–18 minutes. Season it with a pinch of salt and black pepper to taste.
  • Put a lid on the pot and turn the heat down to low or medium-low intensity. Avoid removing the lid during cooking. Cook an extra 12 minutes, until the water is fully absorbed. Afterward, place the rice in a medium bowl and let it cool for 10 minutes.

  • Slice 3 cucumbers into thin slices. Take a grater and shred the carrots. After that, open the canned corn and thoroughly rinse it. Place all these ingredients in the bowl with the rice.

  • In the bowl with all those ingredients, add 1 teaspoon of lemon juice and 1 tablespoon of olive oil. Season it with a pinch of black pepper and salt. Mix everything until thoroughly combined, then serve the dish and enjoy it!
