Put a lid on the pot and turn the heat down to low or medium-low intensity. Avoid removing the lid during cooking. Cook an extra 12 minutes, until the water is fully absorbed. Afterward, place the rice in a medium bowl and let it cool for 10 minutes.
Slice 3 cucumbers into thin slices. Take a grater and shred the carrots. After that, open the canned corn and thoroughly rinse it. Place all these ingredients in the bowl with the rice.
In the bowl with all those ingredients, add 1 teaspoon of lemon juice and 1 tablespoon of olive oil. Season it with a pinch of black pepper and salt. Mix everything until thoroughly combined, then serve the dish and enjoy it!
