Mushroom rice pilaf with pine nuts

Mushroom rice pilaf is the best dish for vegetarians. It is a hearty and tasty meal. Besides that it is cooked very fast. A good idea for a light dinner or lunch. Also you can add chicken meat if desired. Serve with green herbs and aromatic spices.


  • Vegetable broth
    4 cups
  • Fresh mushrooms
    0,8 cup
  • Long-grain rice
    2 cups
  • Pine nuts
  • Green onion
  • Parsley
  • Olive oil
    3 tbsp.
  • Salt
    to taste
  • Ground black pepper
    to taste

  • Open the can with vegetable broth. Then pour it into the pot, bring to a boil.

  • Heat the frying pan. Saute the pine nuts over the medium heat until golden brown. Stir it.

  • Wash and finely chop the mushrooms. Heat the frying pan again, saute the mushrooms.

  • Soak the rice in cold water for 20 minutes, then rinse it.

  • Wash the green onion and finely chop it.

  • Heat the frying pan, add a part of olive oil and pour the rice. Saute the grain until golden brown for about a minute. Then combine with the following ingredients: chopped green onion, pine nuts and mushrooms. Stir everything and remove from the stove.

  • The rice mixture add to the vegetable broth. Season with salt and pepper. Bring to a boil, reduce the heat, close the lid and cook until tender. Then remove from the heat and let it brew for 10 minutes.
