Rice Pilaf with Mushrooms and Pine Nuts

This dish is an interesting lunch option. It will give you a boost of energy and a feeling of satiety for a long period of time. It's easy to prepare.   • Vegetable broth
    3 cups
  • Pine nuts
    0,5 cup
  • Shiitake, cremini, or button mushrooms, roughly chopped

  • Chopped green onions or yellow onions

  • Prepare all the ingredients in the right amount that you will use while cooking.

  • Take the saucepan. Boil the broth in it. You can find his recipe in the tips.

  • Roast the pine nuts over medium heat. They should turn out rosy. Set the nuts aside and move on to the next step.

  • Fry the mushrooms in a dry frying pan until the moisture in them evaporates. Set the cooked mushrooms aside.

  • Raise the fire to a high temperature. Saute the rice in olive oil for about 10 min. It should become golden in color. Always stir the resulting mass during cooking.

  • While the rice is cooking, peel and dice the onion. Then add it to the rice. Continue frying for about 5 more min.

  • At the end, add mushrooms and nuts to this mixture and mix everything well. Turn off the stove. Fine. The last step remains.

  • Pour the resulting mass into the hot broth and mix everything thoroughly. Add salt and spices to taste. Bring this mixture to a boil. Then continue to cook your dish over low heat. Cooking time takes approximately 20 min. It depends on the rice you are using. See the package for how long to cook it. Let the pilaf brew for 10 min, and you can serve. To make the dish more tender, add butter. The dish is ready. Enjoy.
