Rice pilaf with orzo pasta

Pilaf is a national Turkish meal made of rice and orzo pasta. The first mention of this recipe dates back to the 13th century. Also this dish is cooked with bulgur, kuskus and others grains. Serve with stewed/grilled vegetables and meat. Sprinkle with fresh herbs if desired.

  • Orzo

  • Water
    18,5 ounces
  • Olive oil
    1,5 tbsp.
  • Butter
    0,1 pounds
  • Salt
    to taste

Method

  • Soak the rice for 20 minutes, then rinse it.

  • Heat the frying pan, add olive oil and orzo. Gently brown the pasta.

  • When the pasta orzo starts changing color, add the butter. Brown until golden brown.

  • Add the rice to the frying pan and mix well. Then pour water, season with salt. When the water is absorbed, reduce heat to low. Close the lid and simmer for about 15 minutes. Taste if it’s done and remove from the stove.
