Method

  • Chop the scallion into thin slices. Furthermore, take a grater and shred the parmesan cheese. Place these ingredients in a separate small dish.
  • Take a large skillet and heat 2 tablespoons of olive oil over medium heat. Cook the rice, stirring occasionally, until it becomes lightly toasted. Add a pinch of salt and black pepper to taste. Pour in the broth and salsa, and let the mixture reach a low boil. Then lower the heat, cover the skillet, and cook for 15 minutes or until the broth has been fully absorbed and the rice is cooked to tenderness.

  • Place the cooked rice in a large dish; add the cut scallions and grated parmesan. Mix everything very well until all the ingredients are combined. Serve the recipe and decorate it with some mint or parsley leaves. Another great option is to add one fried egg on top of the rice, making the dish even tastier. For that, in a medium skillet, add 1 tablespoon of oil and break an egg; cook for 5 minutes with a lid on top. Place the egg on top of the dish and serve!

Tips

  • Toast the rice. Toasting the rice before adding liquids helps to bring out its nutty flavor and prevent it from becoming sloppy.

  • After cooking, let the salsa rice rest for a few minutes before serving. This will give the rice time to absorb the flavors and will result in a better-tasting dish.

Bon Appetit!
