Take a large skillet and heat 2 tablespoons of olive oil over medium heat. Cook the rice, stirring occasionally, until it becomes lightly toasted. Add a pinch of salt and black pepper to taste. Pour in the broth and salsa, and let the mixture reach a low boil. Then lower the heat, cover the skillet, and cook for 15 minutes or until the broth has been fully absorbed and the rice is cooked to tenderness.
Toast the rice. Toasting the rice before adding liquids helps to bring out its nutty flavor and prevent it from becoming sloppy.
After cooking, let the salsa rice rest for a few minutes before serving. This will give the rice time to absorb the flavors and will result in a better-tasting dish.
