Method

  • Slice the scallions into thin slices. After that, mince the two garlic cloves. 
  • The first step is to clean the shrimp. How to do it? Use a knife to make a shallow cut along the back of the shrimp, from the head to the tail, through the shell. Gently remove the black vein that runs along the back and discard it. This completes the preparation of the shrimp.

  • Heat a large skillet over high heat. Add 1 tablespoon of olive oil and the shrimp to the pan, along with ¼ teaspoon of salt. Cook the shrimp, stirring occasionally, until they turn opaque, which takes approximately 2 minutes. After cooking, remove the shrimp from the pan and set them aside.

  • In the same skillet, add the green beans, scallions, minced garlic, and the rest of the olive oil. Cook, stirring continuously, until the green beans have become tender. Mix in the rice and a pinch of salt, and continue cooking for about 5 minutes until the rice starts to become crispy.

  • Move the rice mixture to one side of the skillet. On the empty side, scramble the eggs. Once the eggs are cooked, mix them into the rice mixture. Add the cooked shrimp, soy sauce, and olive oil. Cook and stir constantly until everything is combined and heated through, which should take about a minute. Finally, top the dish with the green parts of the scallions. Serve the side dish and enjoy its taste!

Tips

  • If you do not want to boil rice again, use cold, leftover rice. For the best texture, use the one that has been cooked and refrigerated overnight. Freshly cooked rice tends to be too moist and can result in a mushy texture.
