Before cooking the rice, make sure to rinse it well, around 2-3 times, until the water becomes transparent. This is an important step that cannot be neglected!
Chop the scallions into thin and small slices. Afterwards, take the garlic cloves and mince them. Place these ingredients in a different small dish.
In a large skillet over medium heat, add olive oil and butter. When the butter has melted, add the onion and garlic cloves, minced. Add 1 cup of rice and 1 teaspoon of turmeric powder. Stir everything until thoroughly combined. Add the vegetable broth and parsley, and cover the skillet with a lid. Increase the heat to medium-high intensity and bring it to a boil.
After that, turn the heat down to medium. Simmer the rice for 15–20 minutes, until the vegetable broth is fully absorbed. Remove it from the heat and let it cool for an extra 5 minutes. Serve the meal in a large dish and enjoy its mouth-watering taste.
For a topping, use parsley leaves or grilled mushrooms. Mushrooms will better combine with the flavor of the turmeric rice. How do you prepare them? Slice the mushrooms and season them with salt, black pepper, and a pinch of tumeric. Place the mushrooms on a tray with a baking sheet and grill over medium-high heat for 15 minutes, until the mushrooms are tender.
