Tip the apples into a saucepan with the sugar, lemon juice and about 50ml water. Bring everything to a simmer, then cover the pan and cook the apples gently for about 10 mins until they collapse. Beat with a spoon to break them up completely.
If you want a smoother, richer sauce, you can push the apples through a sieve and reheat the smooth apple purée with the butter before serving. Can be garnished with chili peppers.
