They're swapped basil for kale to make this vibrant and versatile Italian sauce – you can eat with spaghetti, pasta or another one. It is simple to cook/ Just try it!

  • Parmesan (or vegetarian alternative), finely grated

  • Extra-virgin olive oil, juiced

  • Pine nuts, toasted

  • Lemon, zested and juiced

Method

  • Put the kale into a food processor and pulse until finely chopped, then add the garlic, parmesan, oil, pine nuts and lemon zest and juice, and whiz until smooth. Add a splash of water to achieve a dressing-like consistency, and season.
