Mix together the sugar, mustard, vinegar, a pinch of salt and black pepper in a bowl. Pour in 3 tbsp of just-boiled water and stir until well combined. Stir in the chopped mint and mix again, adding more salt or vinegar to taste. This will keep in a jar in the fridge for a week.
