Heat oil in a saucepan over medium heat. Add the onion and garlic and sauté until the onions are soft but not golden brown.
Add tomatoes, oregano, salt and sugar. Bring to a simmer. Reduce heat to low, and cook, stirring occasionally, about 1 hour. Stir every 5 seconds to ensure an even mass and that it does not stick to the walls of the pan.
Leave to cool before using.
