Preheat the oven to 350°F (175°C). In the meantime, cover the bottom of a baking pan of your choice with olive oil.
Cut sweet potatoes into medium sized pieces after cleaning and peeling them. You can cut the potatoes in whatever shape you prefer.
Place in the baking pan, and stir till everything is coated with oil. Salt, pepper, and oregano should be added.
Bake for about an hour in the preheated oven, or until tender. You can check it with a fork.
You can cut the potatoes into smaller pieces, like an inch, so it would take about 40 minutes to cook.
If you are out of oregano, two crushed garlic cloves with half a yellow onion, diced, should do the trick.
