After cleaning, peeling, and cutting the sweet potatoes into medium-sized cubes, combine them in a bowl with minced sweet onions and garlic.
Roast the potatoes for 30 minutes, stirring often, until the veggies are golden. Then remove it from the heat, put the seasonings in, and drizzle with vinegar.
Green onions can be substituted for the flavor source, but they don't hold up as well in the oven. And for seasonings go with balsamic glaze and fresh Parmesan.
