Egyptian red lentil soup

A very delicious vegetable soup. The dish is perfect for vegetarians and people who are on a diet. No need to soak the lentils, just rinse and cook it.

  • Onions
    2 pcs.
  • Lemon
    2 pcs.
  • Red lentil
    2 cups
  • Garlic
    12 cloves
  • Water
    9 cups
  • Vegetable oil
    4,5 tsp.
  • Ground cumin
    4,5 tsp.
  • Ground allspice
    to taste
  • Turmeric
    to taste
  • Cilantro
    to taste
  • Salt
    to taste

Method

  • Peel onions, rinse and finely cut.

  • Peel potatoes, rinse and cut into cubes.

  • Rinse red lentils for a few times. Then fill a pot with water and add the following ingredients: lentils, onion, peeled garlic, potatoes. Bring to a boil, reduce to low and cook for about 20 minutes until all ingredients are done.

  • Heat the frying pan, pour in vegetable oil.  Add all spices, stir well for a minute. Then add this mixture to the pot.

  • Rinse lemon, squeeze it.

  • Rinse cilantro leaves, finely cut. Pour the lemon juice to the soup. Let it stand about 5 minutes. Sprinkle with herbs, serve.

Tip

  • How to get lemon juice? Take out the lemon from the fridge, leave it heat up for a few minutes. Then roll the fruit on your cooking board with your hands. This action helps to get more juice. Then slice the lemon crosswise using a sharp knife. Squeeze the lemon with the cutting side up, so the seeds don’t fall into the bowl.
