Moroccan red lentil soup

A very simple vegetable soup. It is made of red lentils, carrots, celery, onions and spices. Serve hot with finely chopped herbs.


  • Red lentil
    12 tbsp.
  • Carrots
    3 pcs.
  • Onions
    1,5 pcs.
  • Garlic
    3 cloves
  • Vegetale oil
    4,5 tsp.
  • Bay leaf
    to taste
  • Celery
    6 stalk
  • Cumin seeds
    to taste
  • Ground chili pepper
    to taste
  • Ground pepper
    to taste
  • Salt
    to taste

  • Fill a pot with water, bring to a boil. Peel carrots, rinse and grate. Add to the boiling water, cook for about 10 minutes. Add also bay leaf.

  • Rinse red lentils for about 3-4 times, add to the pot and cook for 20 minutes over medium heat.

  • Peel garlic and onions, rinse and finely cut.

  • Rinse celery, cut into rings.

  • Heat the frying pan, pour in vegetable oil. Add onions, garlic, celery and spices. Brown for 5 minutes, stir well. When the lentil is done, add this mixture and cook again for 20 minutes.
