Pour water over the peas. Soak for a few hours, at least 5.
Soak ham soak in water. Then fill a pot with water (cover the meat completely) and add the smoked meat. Bring to a boil and cook for about 1.5 hours. Skim off the scum.
Peel onions and carrots, then finely cut vegetables. If desired, grate carrots. Heat the pan and saute in vegetable oil until golden brown.
Peel potatoes, the cut them into cubes.
Remove ham hock from pot, add split peas. Cook for about 45-60 minutes. When it starts boiling, pour a few table spoon of vegetable oil. Then cut the smoked meat.
Add ham hocks, chopped potatoes and fried vegetables to the soup when the peas are done. At the end close the pot with lid, leave for a few minutes.
The cooking time of peas depends on its species and type. The dry whole peas are cooked for 2-2.5 hours, split peas: 30-45 minutes.
Peas are cooked slowly in a salted water.
How to cook peas faster? After boiling, add baking soda (½ tsp. to 2 quarts of water), but don’t overdo it.
