A very hearty vegetable soup, full of vitamins. If you eat the pea soup, you won’t get hungry during the day. This recipe is cooked very fast and easy. Serve with bread crumbs and green herbs!

Ingredients

  • Dried split peas
    1 cup
  • Potatoes
    2,5 pcs.
  • Onions
    pcs.
  • Carrots
    pcs.
  • Bay leaf
    to taste
  • Herbs
    to taste
  • Garlic
    cloves
  • Salt
    to taste

Method

  • Pour water over the peas. Soak for a few hours, at least 5 or even 24 hours. Then fill a pot with water, cook the peas for about 45-60 minutes.

  • Peel onions and carrots. Then finely cut them. Heat the heavy bottomed saucepan, add vegetable oil and chopped vegetables. Brown for 5 minutes.

  • Peel potatoes, cut them into cubes. Then add the potatoes to the saucepan. Mix and cover with water. As soon as water boils add salt and reduce the heat to low. Cook until it’s tender.

  • Peel garlic and cut it in half, then add to the saucepan. Pour the cooked peas, chopped parsley and spices to the potatoes. Cook for about 10 minutes.

Tips

  • The cooking time of peas depends on its species and type. The dry whole peas are cooked for 2-2.5 hours, split peas: 30-45 minutes.

  •  Peas are cooked slowly in a salted water.

  • How to cook the peas faster? After boiling, add baking soda (½ tsp. to 2 quarts of water), but don’t overdo it.
