Wash the meat, separate from the bone and cut into small pieces. Fill a pot with water, add bay leaf and 1 peeled onion. As soon as the water boils, skim off the scum with a slotted spoon or simple spoon. Cook for about 90 minutes. At the end remove the onion.
Wash the tomatoes. Cut a cross in the bottom of each tomato. Fill a pot with water and bring to a boil. Dip the tomatoes in the boiling water for a minute. Then take out, pour with cold water and peel with a sharp knife. At the end finely cut.
Pour rice with cold water for 30 minutes, then rinse it.
Chop walnuts with a knife or in a mortar.
Peel and chop the garlic.
Remove the meat from the broth when it’s done. Then finely cut it.
Add rice, beef meat, chopped walnuts and Tkemali sauce. Cook for about 15 minutes.
Then season soup with spices and chopped garlic. Cook for about 10 minutes.
Wash the cilantro, finely cut it. Sprinkle the herbs before serving.
