Rinse chicken, cut it in half. Cut the legs, remove the giblets.
Pour water in a pot. Bring to a boil. Add chicken to boiling water along with the parsley root. If foam appears, remove it with a slotted spoon. Cook over low heat until done. The exact cooking time depends on the age of the poultry.
Peel carrots and onions, cut finely vegetables and add to the pot at the end, not overcook them. Season with any spices to your taste.
Pierce meat with a fork to check if it is done. Strain the broth through a sieve before serving. Serve with croutons or greens.
