A very tasty and creamy soup made of clams, simmered vegetables and cream. It has a tangy flavor of garlic and spices. Serve hot in a deep bowl with croutons and herbs.

Ingredients

  • Cubed potatoes
    3 cups
  • Chopped onions
    15 tbsp.
  • Celery
    1 cup
  • Garlic
    3 cloves
  • Clams
    2 can
  • Melted butter
    12 tbsp.
  • White flour
    12 tbsp.
  • Half-and-half
    3 cups
  • Ground black pepper
    to taste
  • Sugar
    1 tsp.
  • Salt
    1 tsp.

Method

  • Peel onions and garlic, cut coarsely. Then add to a blender jar, puree until smooth.

  • Peel potatoes, rinseand cut into cubes. Next, finely cut the celery. Take a large pot. Add the chopped potatoes, celery, onion, spices and liquid from clams to the pot. First cook over high heat, then reduce to low. Simmer for about 15-20 minutes. The potatoes should be done.

  • Melt butter in a pot or microwave. Pour in half-and-half, sugar, butter and flour to the pot. Stir well until it thickens. Finally, add chopped clams and simmer not more than 5 minutes. Season to your taste.

Tip

  • Don’t overcook clams, they can get tough!
