  • Fresh ginger, peeled and grated

  • Ripe avocados, peeled and mashed
    2 pcs.
  • Freshly squeezed lemons
    2 pcs.
  • Vegetable stock
    20 fl. oz
  • Black pepper
    tsp.
  • Green onion, finely chopped

  • Freshly grated black pepper
    to taste
  • For Limon Crema:
  • Sour cream
    cups
  • Lemon (juice)
    1 pcs.
  • Minced garlic

Method

  • Melt the butter in a saucepan and cook the onions for about 4 minutes, until softened.

  • Add the ginger and continue to cook for an additional 2 minutes. Add the avocado, lime juice, and vegetable stock and whisk to combine. Simmer the soup over medium-low heat for about 5 minutes. Add the green onion and transfer the soup to a blender and purée, until very smooth

  • Stir in salt and pepper, to taste. Chill thoroughly before serving. Serve with a dollop of limon crema.
