Chilled avocado and cucumber soup

Vegetarian light soup with avocado, cucumber and fresh herbs. Just grind all the ingredients and combine them together. Serve this chilled soup as a starter.


  • Avocados
    2 pcs.
  • Cucumber
    1 pcs.
  • Green pepper
    1 pcs.
  • Scallions
    2 sprigs
  • Romaine salad
    2 cups
  • Dill
    to taste
  • Garlic
    2 tbsp.
  • Water
    1 cups
  • Lemon
    to taste
  • Vinegar
    to taste

  • Rinse all the ingredients, then cut coarsely. Place them in a blender and puree until smooth.

  • Squeeze the juice out of lemon. Mix lemon juice and vinegar, then pour this mixture to blender jar. Season with your favorite spices. Pour soup in a deep plate. Add 1 spoonful of yogurt if desired.


  • How to get lemon juice? Take out the lemon from the fridge, leave it heat up for a few minutes. Then roll the fruit on your cooking board with your hands. This action helps to get more juice. Then slice the lemon crosswise using a sharp knife. Squeeze the lemon with the cutting side up, so the seeds don’t fall into the bowl.
