Creamy avocado soup is a delicious dish that doesn’t need to be cooked. You will spend only 15 minutes. Everyone will love this summer soup. Serve it chilled with crackers.


  • Avocados
    2 pcs.
  • Lemon
  • Chili pepper
    1 pcs.
  • Vegetable soup
    1,3333333333333 cups
  • Green onions
    to taste
  • Cilantro
    to taste
  • Garlic

  • Olive oil
    1 tbsp.
  • Coconut milk

  • Peel and rinse green onion. Then finely chop it.

  • Crush garlic in a press or with knife.

  • Rinse chili pepper, remove the seeds and then finely cut it.

  • Rinse cilantro, cut coarsely and leave a part for garnishing.

  • Cut avocado in half, then remove the pits. Grind the pulp in a blender.

  • Squeeze the juice out of lemon, then add to blender jar.

  • Then add the following ingredients: vegetable broth, chopped green onion and cilantro, crushed garlic, chili, coconut oil, olive oil, yogurt and sugar. Mix well. Season with spices. Then let it cool. Garnish with cilantro.


  • How to get lemon juice? Take out the lemon from the fridge, leave it heat up for a few minutes. Then roll the fruit on your cooking board with your hands. This action helps to get more juice. Then slice the lemon crosswise using a sharp knife. Squeeze the lemon with the cutting side up, so the seeds don’t fall into the bowl.

  • Wear gloves and peel chili pepper, so you do not burn your skin. First wash chili, then cut lengthwise with a sharp knife. Remove the seeds with a blade of knife. Then wash your knife and cutting board thoroughly. Do not touch your face and eyes while cutting.
