Asparagus soup

A soup that is good at any time of year. Fresh and delicate flavor. Can be served hot or cold.

  • Butter
    1 tbsp.
  • Olive oil
    1 tbsp.
  • Onion, chopped
    1 pcs.
  • Cut fresh asparagus (1-inch pieces)
    4 cups
  • Red potatoes, peeled and cubed
    3 pcs.
  • Vegetable broth
    2 can
  • Grated lemon zest
    2 tsp.
  • Salt
    to taste
  • Pepper
    to taste
  • Ground coriander
    tsp.
  • Ground ginger
    to taste
  • Garnish:
  • Minced chives
    0,2 cup
  • Creme fraiche or sour cream
    0,2 cup
  • Lemon juice
    1 tbsp.
  • Grated lemon zest
    tsp.

Method

  • Combine the ingredients for garnish. 

  • In a saucepan, melt the butter and fry the onion in it until it becomes soft, then add the potatoes, asparagus and spices, fry for 3 minutes. When done, pour in the stock, add the lemon zest and bring to the boil. When the soup comes to a boil, reduce the heat and simmer for another 15-20 minutes.

  • Puree the soup until smooth and pour onto plates, serve with garnish.
