The secret of good onion soup is in caramelization of onions. The caramelization is a cooking method made by the French when the natural sugar comes from the onions. It occurs when you are frying the onions in butter.
A very popular soup, different from others with a sweet and creamy taste. Serve in deep bowls with croutons!


  • Leek

  • Potatoes

  • Butter

  • Rye croutons

  • Cut leek and onions into rings. Melt butter in a saucepan, add the chopped ingredients and saute them until golden brown.

  • Peel potatoes and cut into the cubes. Then pour water into the pan and add the potatoes. Cook until done (15-20 minutes).

  • Puree all the ingredients in a blender. Add the cream and mix. Serve the onion soup with croutons. Season with salt, pepper and any spices to your taste.
