A thick, milky banana puree soup with the flavor of orange zest. Good as a dessert for little sweet tooth as well as for adult gourmets. Ideal in hot weather, but nevertheless very hearty. Method

  • Wash and peel the bananas. Cut into medium sized pieces, put in a bowl and mash with a fork or grind in a blender to puree. Mix with milk, a little salt, pour into a small saucepan and bring the mass to a boil.

  • Prepare the sugar syrup. Combine the water in a separate saucepan with the sugar and cook until it dissolves. Then add chopped orange zest. And boil it for a couple of minutes more. First, melt the sugar in the microwave and then dilute it with water so that the syrup has a caramel flavor.

  • Toast a tablespoon of flour in a pan until creamy. Be very vigilant, as the flour darkens very quickly, so toast it on a very low heat and stay on the stove. Add the sugar syrup and the dried flour to the milk-banana mixture and bring to a boil. Stir everything thoroughly.

  • The soup is ready! Turn off the stove and remove the pot of soup to a cold place, and let stand until it reaches a temperature slightly below room temperature. Serve with ice cream, nuts sprinkled with cocoa or chocolate shavings.

Tips

  • The skin of bananas should be whole, without cracks. It is also better not to buy a banana with a torn stalk.

  • The smell of quality bananas is pleasant, but not too intense. A strong aroma is a sign that the fruit is overripe.
