A thick, milky banana puree soup with the flavor of orange zest. Good as a dessert for little sweet tooth as well as for adult gourmets. Ideal in hot weather, but nevertheless very hearty. If you rub chocolate shavings on top, you will undoubtedly have everyone who is lucky enough to try this soup asking for the recipe. Intrigued? Then let's make it!

  • Wash and peel the bananas. Cut into medium sized pieces, put in a bowl and mash with a fork or grind in a blender to puree. Mix with milk, a little salt, pour into a small saucepan and bring the mass to a boil.

  • Prepare the sugar syrup. Combine the water in a separate saucepan with the sugar and cook until it dissolves. Then add chopped orange zest. And boil it for a couple of minutes more. First, melt the sugar in the microwave and then dilute it with water so that the syrup has a caramel flavor.

  • Toast a tablespoon of flour in a pan until creamy. Be very vigilant, as the flour darkens very quickly, so toast it on a very low heat and stay on the stove. Add the sugar syrup and the dried flour to the milk-banana mixture and bring to a boil. Stir everything thoroughly.

  • The soup is ready! Turn off the stove and remove the pot of soup to a cold place, and let stand until it reaches a temperature slightly below room temperature. Serve with ice cream, nuts sprinkled with cocoa or chocolate shavings.


  • The skin of bananas should be whole, without cracks. It is also better not to buy a banana with a torn stalk.

  • The smell of quality bananas is pleasant, but not too intense. A strong aroma is a sign that the fruit is overripe.
