Let's make dumplings first. These dumplings can be made in advance and stored in the freezer. To do this, separate the whites from the yolks, beat the yolks with sugar until smooth. Heat the milk in the microwave and carefully pour into the yolks. Beat egg whites with a pinch of salt until stiff. Add the flour to the egg and milk mixture and gently fold in the beaten egg whites. Knead the dough consistency, approximately, as on dumplings.
Divide the dough into small balls, roll each of them into a sticks. Cut the sticks into small pieces. Sweet dumplings are ready!
Remove pits from plums. Put the fruits in a saucepan, pour water so that it covers them completely, and cook until soft over medium heat. Do not pour out the resulting liquid, it will still be needed.
Remove the skin from the prepared plums, rub through a sieve, add 3 tablespoons of sugar, a pinch of cinnamon, a little nutmeg, a half of cup of red wine and 1 cup of milk. Stir and boil. Place a lid on top and leave for 15 minutes. Boil dumplings. Ready dumplings will simply float to the surface of the water. Put the dumplings in a plate, pour over the soup and put a spoonful of sour cream on top.
The ripeness of plums is most often determined by the saturation of the color. If the variety implies yellow fruits, then the green color of the skin will be a sign of its immaturity. The plum becomes black in several stages: first the fruit is green, then yellow, gradually it turns red and only after that it acquires a black tint. This nuance must be taken into account when buying plums.
Usually dumplings are made from wheat flour with the addition of various ingredients. They are served to the table not only boiled, but also fried. Dumplings made from semolina are dense in structure, have a rich aroma and taste.
