Colombian soup is originally done with chicken meat, but try preparing it with turkey. The turkey version has a more delicate flavor and is enriched by the addition of other ingredients such as potatoes and avocado. Do not miss the chance to give this recipe a try!

Method

  • The first step is to wash and peel the potatoes' skin. Then, place the potatoes on a cutting board and start chopping them into medium cubes. Place them in a separate bowl. 

  • The following step is to remove the onion and garlic cloves skins and chop them into thin pieces. Also, take the turkey breast, place it on a cutting board, and chop it into medium-sized cubes.

  • In a large pot, pour 2 tablespoons of olive oil and add the cut turkey breast. Cook the turkey for around 5–10 minutes. After those minutes pass, add the cut onion and garlic cloves and sauté everything for around 5 minutes, until the onion becomes translucent.

  • Transfer the sautéed vegetables into a deeper pot, so that the soup will have enough space to prepare. Pour the turkey broth into the pot, and also add the cut potatoes. Bring the soup to a boil and simmer the soup for around 15 minutes until the potatoes become soft. When simmering, do it on medium heat. 

  • When the soup is done, season everything with the desired spices and serve the soup. Place the cut avocado on top of the soup; this is a decorative ingredient. Enjoy!

Tips

  • The soup is originally served with canned corn or even a piece of boiled corn. Try adding the corn when the soup is simmering on medium heat. After adding these ingredients, the dish will become more unique.
