  • Turkey breast fillet
    15 oz.
  • Dried rice noodles
    6 oz.
  • Carrot
    1 pcs.
  • Scallions
    2 pcs.
  • Garlic
    2 cloves
  • Ginger
    2 oz.
  • Turkey broth
    4 cups
  • Soy sauce
    1 tbsp.
  • Vegetable oil
    1 tbsp.
  • Salt
    1 tsp.

Method

  • Place a medium-sized pot on the heat and wait till the water boils. Place the noodles in the pot and cook for 8–10 minutes on medium heat. When done, drain the excess water from the pot and transfer the noodles to a separate bowl. 

  • Take a cutting board and place the washed carrots and scallions on it. Cut the vegetables into small pieces. Chop the carrots into small-medium cubes. Then, with the help of a grater, grate the ginger. 

  • Next, remove the skin from 2 garlic cloves and gently mince them with the help of a knife. By doing so, the flavors of the soup will be enhanced. 

  • Heat 2 tablespoons of olive oil in a large pot and add the sliced turkey breast. Cook until the meat is browned; it usually takes around 10–15 minutes. Afterward, transfer to the pot the minced garlic, scallions, carrots, and, of course, ginger. Mix all those ingredients until the vegetables become softer. Then, pour the turkey broth into the soup along with the soy sauce, and let the soup simmer for around 15 minutes.

  • When those minutes pass, taste and season the soup with any seasoning of your choice. If desired, add 1 teaspoon of salt and a pinch of black pepper. Stir the soup and serve it with a side dish. Enjoy this delectable dish!

Tips

  • If you prefer more spicy soups, try seasoning the soup with a pinch or even a teaspoon of hot chili powder. Furthermore, the dish can be served with a small chile pepper.
