Soup with Barley and Turkey Gizzards

  • Turkey gizzards
    16 oz.
  • Barley
    1 cup
  • Onion
    1 pcs.
  • Garlic
    2 cloves
  • Turkey broth
    4 cups
  • Water
    2 cups
  • Olive oil
    2 tbsp.
  • Salt
    1 tsp.
  • Black pepper
    to taste

  • Wash and chop the onion and garlic cloves into small pieces. When done, take the barley grains and wash them under lukewarm water, then rinse off the excess water. 

  • If desired, you can chop the turkey gizzards into smaller pieces and season them with your desired spices, for example, with a pinch of salt and black pepper. 

  • In a large pot, pour 2 tablespoons of olive oil and bring it to a boil. Then transfer the cut gizzards to the dish and cook until the meat reaches a brown color. Prepare it for about 7 minutes. After those minutes pass, add the chopped onion and garlic cloves and sauté until the onion reaches a golden color. 

  • Pour into the soup the turkey broth and the barley grains. Season the soup with 1 teaspoon of salt and mix the soup well while it simmers. Cook the soup for 35–40 minutes, until the barley reaches a soft consistency. Reduce the heat and then serve the soup in separate dishes. Enjoy the meal with a delectable side dish!


  • If you are not a barley lover, substitute it with other grains such as quinoa or farro. The taste will not drastically change.
