Wash and chop the onion and garlic cloves into small pieces. When done, take the barley grains and wash them under lukewarm water, then rinse off the excess water.
If desired, you can chop the turkey gizzards into smaller pieces and season them with your desired spices, for example, with a pinch of salt and black pepper.
In a large pot, pour 2 tablespoons of olive oil and bring it to a boil. Then transfer the cut gizzards to the dish and cook until the meat reaches a brown color. Prepare it for about 7 minutes. After those minutes pass, add the chopped onion and garlic cloves and sauté until the onion reaches a golden color.
Pour into the soup the turkey broth and the barley grains. Season the soup with 1 teaspoon of salt and mix the soup well while it simmers. Cook the soup for 35–40 minutes, until the barley reaches a soft consistency. Reduce the heat and then serve the soup in separate dishes. Enjoy the meal with a delectable side dish!
If you are not a barley lover, substitute it with other grains such as quinoa or farro. The taste will not drastically change.
