Method

  • In a large mixing bowl, add ground turkey meat together with chopped onion, breadcrumbs, 1 egg, and seasonings, such as salt and black pepper. Mix the meat well until all the ingredients are thoroughly combined. Then proceed with forming medium-sized meatballs and placing them aside while preparing the rest of the ingredients for the soup.

  • Wash the carrots and the cabbage. After that, cut the carrots into small cubes and set them aside. Then, take a grater and shred the cabbage. 

  • In a large pot, pour the turkey broth and water together with the white vinegar. When the broth starts boiling, transfer the turkey meatballs and cook for 15 minutes, until they are done. 

  • Add the chopped carrots and cabbage to the soup and simmer for an additional 5–7 minutes. When done, season the soup with salt and black pepper. Decorate the soup with a boiled egg cut in half. Cool down the dish and serve it. 

Tips

  • For a less meaty flavor, opt for a vegetable broth instead of a turkey broth. Substituting the broth might lower the calories in the soup.
