  • Ground turkey
    16 oz.
  • Breadcrumbs
    0,5 cup
  • Parmesan cheese
    1,8 oz.
  • Fresh parsley leaves
    1,8 oz.
  • Egg
    1 pcs.
  • Salt
    1 tsp.
  • Black pepper
    a pinch
  • Turkey broth
    4 cups
  • Pasta of choice
    1 cup
  • Canned chickpeas
    1 cup

Method

  • First, place a grater on a flat surface or on a plate. Start by gently grating the parmesan cheese, and when done, place it in a mixing bowl. The following step would be to chop the parsley and also add it to the mixing dish. 

     

  • Add the breadcrumbs, ground turkey, and one egg to the bowl with the parsley and parmesan cheese. Add salt and pepper to taste. Mix everything, and form small meatballs from this mixture.

     

  • In a pot, pour turkey broth and bring everything to a boil. Afterward, add the pasta and cook for around 7 minutes. After those minutes pass, add the turkey meatballs and boil everything for another 10 minutes until the meat is cooked.

     

  • Open the canned chickpeas, rinse the water from the can, and add the grains to the turkey broth with the pasta and meatballs. Cook for an additional 4–6 minutes. Taste the soup and, if desired, season with an additional teaspoon of salt and a pinch of black pepper. Serve the dish and enjoy the light flavor of turkey soup.

     

Tips

  • To give the meatballs more flavor, experiment with adding some minced garlic, chopped onion, or Italian seasoning to the mixture.
