Wash the potatoes, then remove their skin. Place the potatoes on a cutting board and chop everything into cubes.
Wash and cut the onion, carrots, and celery. Also, mince the 2 garlic cloves. This will enhance the flavor of the soup.
Add 2 teaspoons of olive oil to a pot. Add the celery, onion, and carrots once the oil is heated. Sauté for 5 minutes, or until the onion turns a golden color. Next, add the minced garlic and cook for another 2 minutes.
In the bowl with sautéed vegetables, pour the turkey broth and potatoes and boil for 20–25 minutes. Usually, the soup is done when the potatoes become tender. Do not forget to taste the soup and see if it needs more seasoning. If needed, add 1 extra teaspoon of salt. Enjoy!
If you want your soup to have more flavor, try adding some additional herbs, such as bay leaf or thyme.
