Cheddar cheese soup

  • Broccoli
    2 cups
  • Onions
    1,5 pcs.
  • Carrots
    1,5 pcs.
  • Garlic
    3 cloves
  • White flour
    15 tbsp.
  • Cheddar cheese
    1,5 cups

  • Vegetable broth

  • Divide broccoli into florets, blanch it. Fill a pot with water, bring to a boil. Dip the florets into boiling water for about 1.5 minutes (maximum) until they are soft. Remove with a slotted spoon to the plate.

  • Peel onions, finely cut.

  • Peel carrots, rinse and finely cut or grate it.

  • Grate Cheddar cheese.

  • Crush garlic with a knife.

  • Heat the frying pan, add oil. Brown the onions and chopped carrots. Cook until translucent (onion). Then pour flour, stir well with vegetables.

  • Slowly pour in vegetable broth, stirring constantly. Add cream and stir again. When the soup is boiling, add grated cheese. Stir constantly, until the cheese is melted. Season to your taste and add broccoli florets. Cook for about 10 minutes and serve.


  • How to make croutons? Cut white bread into cubes. Spray with olive oil, season with salt, sprinkle with grated cheese. Mix well and transfer to the baking sheet. Bake in the oven for about 15 minutes at 302 F.
