Quick broccoli Cheddar soup

The best recipe for winter days. Broccoli Cheddar soup is made of vegetable and dairy products. It is cooked very easy and fast. Follow our steps. Serve hot with croutons or herbs.

  • Chicken broth

  • Divide broccoli into florets with a knife.

  • Peel carrots, rinse and grate.

  • Peel garlic and onions, finely cut. Heat a large pot, add butter. Brown the chopped onions for 2 minutes. Then add garlic and flour. Stir well, cook until golden.

  • Cook chicken broth according to the directions below or use bouillon cubes. Pour the broth to the pot, add milk. Stir well, to get smooth mixture.

  • Add spices and the listed powders. Cook for about 5-7 minutes until the soup thickens. Then add broccoli and carrots. Cook until vegetables are tender. Pour grated cheese. Stir well until the cheese is melted.


  • How to make croutons? Cut white bread into cubes. Spray with olive oil, season with salt, sprinkle with grated cheese. Mix well and transfer to the baking sheet. Bake in the oven for about 15 minutes at 302 F.

  • How to cook chicken broth? Cut the chicken fillets into pieces. Fill a pot with water (about half of pot so that the water completely covers the meat). Bring to a boil. Put the chicken only in boiling water. In this case, the broth will be transparent. Cook over low heat until tender (about 30 min.). Season with spices (bay leaf, peppercorns). Add only hot water during the cooking.
