The summer is the time for fresh vegetables and fruits. Make watermelon soup with chopped vegetables and herbs. This is a chilled and fast dish for hot days. Garnish with lime wedges.

  • Watermelon
    4 cups
  • Tomatoes
    1 cup
  • Cucumbers
    1 cup
  • Sweet pepper
    cup
  • Lime
    1 pc.
  • Garlic
    2 cloves
  • Red onion
    pc.
  • Olive oil
    cup
  • Red wine vinegar
    1 tbsp.
  • Herbs
    to taste
  • Ground black pepper
    to taste
  • Sugar
    to taste
  • Salt
    to taste

Method

  • Rinse all vegetables, then remove the seeds and cut into cubes.

  • Puree watermelon in a blender. Leave one cup for garnish. Rinse herbs (cilantro, parsley or dill), then finely cut.

  • Combine all ingredients in a pot, pour with pureed watermelon. Then add spices, olive oil, vinegar, chopped onion, peeled garlic, lime juice (1 or 2 tbsp.). Refrigerate soup for 80 minutes and serve.
