Rinse all vegetables, then remove the seeds and cut into cubes.
Puree watermelon in a blender. Leave one cup for garnish. Rinse herbs (cilantro, parsley or dill), then finely cut.
Combine all ingredients in a pot, pour with pureed watermelon. Then add spices, olive oil, vinegar, chopped onion, peeled garlic, lime juice (1 or 2 tbsp.). Refrigerate soup for 80 minutes and serve.
