Watermelon gazpacho

Chilled Spanish soup made of watermelon, tomatoes, cucumbers and fresh herbs. This recipe is a good idea for meeting with friends. It can be served with pita or as a side dish. Add more spices or garlic to your taste.


  • Watermelon
    3 tbsp.
  • Tomatoes
    2 pcs.
  • Cucumbers
    2 pcs.
  • Lime
    to taste
  • Celery
    2 stalks
  • Romaine salad
    1 head
  • Cilantro
    2 tbsp.
  • Cubed ice
    1 pc.
  • Vinegar
    2 tbsp.
  • Sea salt
    to taste

  • Cut watermelon pulp into cubes.

  • Peel cucumber, remove seeds, cut into small pieces. The same do with tomatoes.

  • Rinse celery and herbs (you can choose any herbs: parsley, basil, mint). Put all ingredients to a blender jar. Grind until smooth. Then add vinegar, salt and your favorite spices. Refrigerate for 2 hours. Garnish with herbs, ice cubes and lime wedges before serving.
