Minestrone is one of the most popular Italian soups in Europe and USA . It is made of stewed vegetables, meat and pasta, poured with water or broth. Serve hot, sprinkled with fresh herbs.

Method

  • Peel the carrots, rinse under running water and cut in a random shape.

  • Rinse the tomatoes, then cut them.

  • Peel the onions and garlic, finely cut them.

  • Heat the frying pan, pour oil. Add the onion and garlic. Brown for 2 minutes. Add the ground meat, cook for 3 minutes. Stir all the ingredients. Remove from heat, add these mixture to the pot (not less than 3 litres=1 gallon pot). Season with spices.

  • Add the carrots and tomatoes to the pot. Brown for about 1 minute. Pour the broth and water. Bring to a boil, then cook over medium heat for 10 minutes.

  • Rinse the zucchinis, cut them into cubes. Simmer for 3 minutes.

  • Open can, drain the liquid and add beans to the pot.

  • Then add pasta. Cook for 8 minutes. Don’t forget to stir the soup (pasta may stick to the bottom of the pot).

  • When the soup is done, remove from stove. Sprinkle with chopped spinach, basil and ried herbs. Serve in 5 minutes.
