Minestrone is a tasty Mediterranean soup, made by Italians. Initially, this dish was cooked from all kinds of vegetables, then with meat and pasta. It is served hot for any meal!

  • Red beans

  • Pasta
    6 tbsp.
  • Leek
    2 pcs.
  • Celery
    2 stalk
  • Grated Parmesan cheese
    to taste
  • Olive oil
    4 tbsp.
  • Pesto
    2 tbsp.
  • Salt, ground pepper
    to taste

Method

  • Soak the beans in water overnight. Then drain water, add to the pot and fill with a cold water. Bring to a boil and drain the water. Repeat the actions and cook for about 15 minutes. Drain water.

  • Peel the vegetables, rinse them and cut in a random shape. Just tomatoes cut into strips.

  • Fill a pot with cold water, add beans and vegetables (except tomatoes). Pour olive oil, bring to a boil. Cook for half an hour, cover with a lid.

  • Add the tomatoes, cook again for about 10 minutes.

  • Then add pasta. Cook for about 8 minutes.

  • Combine pesto and a little water. Then pour this mixture into soup. Season with spices and sprinkle with grated cheese.
