Minestrone soup dates back to Ancient Rome. There was a wide variety of vegetables in that time, 2 cent. BC. Thanks to this, people began to cook something like a soup. This dish was called “poor man’s soup”.
We recommend a very simple minestrone soup recipe made of chicken meat, vegetables and herbs.

  • Cherry tomatoes

  • Carrots
    pcs.
  • Onions
    pcs.
  • Canned red bean

  • Tomato paste
    tsp.
  • Celery
    stalk
  • Olive oil
    to taste
  • Fresh basil
    to taste
  • Italian spice blend
    to taste
  • Salt, ground pepper
    to taste

Method

  • Cut the chicken breast and bacon into chunks. Then brown bacon on both sides for a few minutes.

  • Peel the onions and carrots. Rinse vegetables and finely cut.

  • Rinse the celery, cut into rings.

  • Heat the thick-bottomed frying pan, pour in olive oil (about 2 tbsps.). Brown all chopped ingredients for 10 minutes, except chicken. Then add the chicken, cook for about 5 minutes.

  • Season with spices. Add tomato paste, halved tomatoes and beans to the chicken. Fill the frying pan with water (completely cover the meat). Bring to a boil.

  • Rinse basil, finely cut. Then add to the frying pan, cook for about 10 minutes. Serve hot!
