In a saucepan, melt the butter, add the onions and fry over medium heat until the onions are soft, stirring constantly. When the onions have softened, reduce the heat and fry them for about 40 minutes. After that, add the wine and garlic. When the liquid has evaporated a little, pour in the broth and spices. Bring to the boil. Reduce the heat and simmer for another hour, stirring occasionally.
Preheat the oven to 400, place the sliced baguette on the rack, drizzle with oil and bake for 3-5 minutes. Croutons rub with garlic.
To serve, pour the soup into broiler-safe bowls, place 2 croutons in it, sprinkle the cheese on top and bake until the cheese melts.
