Italian tomato soup with basil

A very tasty Italian soup, made of tomatoes. It is served with crispy toasts and basil leaves. Eat hot or cold to your taste.


  • Tomatoes

  • Dip fresh tomatoes (leave 1) in boiling water for 1-2 seconds. Then peel them and remove stalks.

  • Peel garlic, finely cut it.

  • Remove seeds from chili pepper, finely cut pepper (see how to cut properly below).

  • Rinse sweet pepper, cut into cubes. The same do with the remaining tomato.

  • Use blender to puree the peeled tomatoes until smooth. Pour olive oil, add chopped chili pepper and garlic, basil leaves. Season with salt. Next, pour vegetable broth into the blender jar. Mix for 4 minutes.

  • Pour tomato mixture into the bowls, heat in a microwave for 1 minute. Brown chopped pepper in a frying pan in olive oil. Then add the browned pepper and chopped tomato to the bowls. Drizzle olive oil over the dish and garnish with a sprig of basil.


  • How to peel tomatoes? Rinse the tomatoes. Cut a shallow “X” in the bottom of each tomato. Fill a pot with water, bring to a boil and dip the tomatoes in boiling water for a minute. Then cover them with cold water and peel with a sharp knife.

  • How to peel chili pepper? Wear gloves and peel the chili pepper, so you do not burn your skin. First wash chili, then cut lengthwise with a sharp knife. Remove the seeds with a blade of knife. Then wash your knife and cutting board thoroughly. Do not touch your face and eyes while cutting.
